Ingredients
2 Tbsp. oil
2 lbs. (.908 kg) ground chicken
1 box Homestyle Chili Seasoning Mix
6 Tbsp. tomato paste
1 ½ cups chicken broth or lager-style beer
2 cans (796 mL each) diced tomatoes
1 can (540 mL) red kidney beans, drained & rinsed
Instructions
Heat oil in a large skillet over medium heat; add ground chicken; break up the ground chicken with the back of a spoon while cooking and stirring. Stir in Homestyle Chili Seasoning Mix and tomato paste, mix until well combined. Add chicken broth and diced tomatoes. Bring to a boil. Reduce heat and simmer for 30 minutes, stirring occasionally. Add kidney beans and simmer for another 15 minutes. Serve with a dollop of sour cream and grated cheese on top, if desired.
A side of corn bread, biscuits or beer bread is a nice addition to this meal.
